Low Carb Ingredients:
Slice 2 sheets of low carb Lavash Bread to about the size of lasagna noodles.
1 smallish zucchini sliced thinly longways similar to lasagna noodles.
Cottage Cheese or Ricotta cheese
1 Jar of low carb marina sauce
Mushrooms – canned or fresh. I used fresh because I had them.
1 lb. seasoned browned ground beef (always a container in my fridge to grab for quick meals like this).
Spray bottom or the pan with cooking spray.
Pour a little marinara on the bottom of your pan.
Place a layer of the Lavash Bread strips on the bottom of the pan.
Next sprinkle a layer of the ground beef
Sprinkle the mushrooms on top
Then a few dollops of ricotta or or cottage cheese.
And then a layer of shredded mozzarella cheese.
A little more marina over all of that
Use the sliced zucchini like you would noodles.
Then repeat everything in the first layer but leave out the Lavash bread.
Top with a 2nd layer of the Lavash bread strips
Top with remaining marinara sauce and a heavy layer of cheese.
*Keep in mind that the zucchini will release some liquid so one jar of sauce should be plenty or it may get kind of soupy.
Bake at 400 for 35 minutes.
