Celene's Best Ever Low Carb / Keto Bread

  • 1/2 C. Butter melted (1 stick)
  • 2 T. Coconut oil melted
  • 3 Eggs
  • 1 C. Egg whites
  • 3/4 C. Blanched Almond Flour
  • 1/4 C. Coconut Flour
  • 1/4 C. Psyllium Husk Powder
  • 1 tsp. Baking powder
  • 1/2 tsp. Zanthum gum
  • 1/2 tsp. Mineral salt or Himalayan pink salt
  • 1/2 tsp. or 1 packet stevia
  • 1/2 tsp. Apple Cider Vinegar


  1. Preheat oven to 355 degrees.
  2. Line loaf pan with parchment or use these awesome silicone loaf pans
  3. Mix all dry ingredients in a bowl and set aside
  4. Using a stand mixer or hand mixer, add eggs to a your mixing bowl and beat on high for 1-2 minutes
  5. Add melted coconut oil and butter to egg and continue beating
  6. Add apple cider vinegar and beat for a few seconds until incorporated

  7. Add dry ingredients about a quarter cup at a time. Batter will become thick, but will still be batter, not like dough. If it's too thick add a little water or almond mild to thin out a bit.

  8. Scrape into loaf pan and spread out evently
  9. Bake 40-45 minutes (fork or toothpick should come out clean in the middle when done)

Be very gentle when removing from the oven. Set the pan on a rack to cool. If you giggle it around much, it will fall. Once cooled remove from loaf pan.
